BEEF CONSOMMÉ

A consommé can really showcase a home chef’s technique and skill. The secret lies in the purity of the flavour, the difference in how it feels in the mouth and how the flavour lingers versus broth. DARK BEER BRAISED BEEF

Preparation

  1. In a saucepan sear the cubes of beef in oil and butter. Set aside.
  2. Sauté the bacon, carrots and onions in the same saucepan.
  3. Add the beef, sprinkle with flour and allow to brown for 1 minute. Deglaze with the beer. Add the Aylmer Beef Consommé, and bring to a boil while stirring. Add the horseradish and garlic.
  4. Preheat the oven to 300ºF.
  5. Cover, place in the oven and allow to simmer for about 2 hours.
  6. Serve with rice.

BEEF AND BROCCOLI SESAME STIR-FRY

Preparation

  1. In a large pan, heat the oil on high heat and cook the beef strips for 4-5 minutes. Remove.
  2. In the same pan add the green onions, garlic, carrots, broccoli and water and continue to cook for approximately 3 minutes.
  3. In a small bowl mix the Aylmer Beef Consommé, soya sauce and cornstarch then pour on the vegetable mix.
  4. Add the meat and cook for 2 to 3 minutes until the meat is very hot.
  5. Remove the pan from the stove and add the oil and sesame seeds. Serve.
